Small Steamed Tamales (Vaporcitos / Tamalitos / Chan Ooxontbil Waaj)

Chaayil waaj (literally 'chaya tortilla/bread' in Yucatec Maya) are small steamed tamales built around three ingredients that define the pre-contact Maya kitchen: nixtamalized maize masa, chaya (Cnidoscolus aconitifolius), and toasted ground squash seeds. A hard-boiled egg is folded into each one, making this a complete vegetarian meal of real weight. They are the individual counterpart to brazo de reina, the long rolled tamal log that carries the same filling; where brazo de reina is assembled as a single cylinder for slicing, these are formed and steamed one by one, wrapped in banana leaves. The dish is rooted in the milpa villages of the Yucatecan interior, where chaya grows as a perennial hedge plant and squash seeds are processed at harvest and kept year-round. No colonial influence shaped this combination; it is as close to pre-Hispanic daily food as the region still cooks.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Masa ground from dried field maize (Zea mays) nixtamalised at home or by a trusted molino, with lard rendered from Yucatecan black-haired pig; k'óol built from turkey stock; banana leaves from fresh-cut Musa plants, not frozen.
02
STANDARD: Commercially prepared Yucatecan tamal masa, good-quality lard, k'óol from chicken stock, banana leaves thawed from vacuum-packed frozen.
03
MINIMUM: Packaged masa harina reconstituted with lard and warm broth is acceptable only as a test batch — the texture coarsens noticeably on steaming and the flavour flattens.

Sensory Tests

◇Banana leaf after flaming: deep green, supple without cracking, faintly aromatic — not charred or brittle.
◇Masa before assembly: presses between thumb and forefinger without crumbling, holds a clean impression, smells of nixtamal and lard.
◇K'óol rojo consistency: coats a spoon and holds a ribbon for 3 seconds; too thin and it will pool and waterlog the masa during steaming.
◇Tamale after 1 hour steam: leaf releases from masa without tearing or leaving wet residue; masa is uniformly firm, pale gold, and springs back when pressed lightly with a fingertip.
◇Interior cut test: filling is moist and distinct, not dissolved into the masa; epazote is wilted but retains colour.
