Coconut Macaroons

Cocadas are dense, chewy coconut macaroons built on freshly grated coconut, sugar, and egg whites — a confection that has been sold at market stalls and convent pastry counters across the Yucatán Peninsula for generations. They are direct descendants of the Spanish colonial sweet-making tradition, where convents turned surplus eggs and local coconut into shelf-stable treats. The texture is the point: crisp at the edge, yielding and almost custard-soft at the centre. They share a bloodline with the Burnt-Sugar and Coconut Caramels known as Negritos, and sit alongside the Coconut Macaroon Pie — Pay de coco — as one of the Peninsula's enduring coconut sweets.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Freshly grated mature brown coconut (Cocos nucifera), grated the same day; unrefined Mexican cane sugar for depth; free-range egg whites at room temperature
02
STANDARD: Unsweetened desiccated coconut, rehydrated briefly in warm water and well-drained; standard granulated white sugar
03
AVOID: Sweetened shredded coconut — it tips the sugar balance beyond control and produces a cloying, flat result

Sensory Tests

◇At the pan stage: the coconut-sugar mass should pull cleanly from the pan sides and look glossy but not wet — if it still slumps, cook another 2 minutes
◇Egg whites at soft peaks: the whisk lifted leaves a peak that curls over gently; if the tip stands straight and dry, they are over-beaten and will not fold in cleanly
◇Out of the oven: the edge of each macaroon should be a deep amber ring; press the crown lightly — it should yield slightly and spring back, not collapse or feel liquid
