Lima Beans and Chayote in Pickled Onions

Ibes en escabeche is a composed side dish from Peto, in the southeastern interior of Yucatán, built around the ib (Phaseolus lunatus, the regional lima bean), chayote, and jícama, all brought together by the deep, vinegar-spiced brine of Cebollas en escabeche. The dish is plated as a platter: chayote and jícama around the rim, beans in the centre, pickled onions and chile strips laid across the top, quartered hard-boiled eggs as garnish. Two recados — recado para escabeche and recado rojo — are puréed with aromatics and enriched lard to form the cooking liquid for the beans, giving what looks like a simple vegetable dish a layered, acidic depth that reads firmly Yucatecan. It moves quickly from pot to table and loses clarity if it sits.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh ibes (Phaseolus lunatus) shelled same day, enriched lard rendered from Yucatecan pork back fat, hand-ground recados, Seville orange juice pressed to order
02
STANDARD: Fresh or frozen baby lima beans, good-quality commercial lard, reliable pre-ground recados, Seville orange juice from frozen concentrate
03
ACCEPTABLE: Dried lima beans (soaked overnight and pre-cooked), Spanish olive oil in place of lard — flavour is thinner but the structure holds

Sensory Tests

◇Purée frying stage: the fat pools visibly at the pan edge and the colour shifts from orange-pink to brick red — that is the signal to add the beans
◇Bean doneness: press one between thumb and forefinger; it should give cleanly without bursting its skin or leaving a chalky centre
◇Chayote blanch: a knife tip should slide in with light resistance — if it meets no resistance at all, the slices will collapse on the platter
◇Finished platter: the brine from the pickled onions should not pool in the bean centre; if it does, the onions were not drained long enough
