Chicken Cooked in the Pib — Pollo Pibil

Pollo pibil is the chicken counterpart to the more widely known cochinita pibil, built on the same recado rojo foundation but lighter in fat and faster to cook through. The marinade — achiote (Bixa orellana) paste loosened with bitter Seville orange juice and seasoned with black pepper, allspice, cumin, and charred garlic — penetrates the bird overnight, staining the flesh copper-red and layering it with warm, earthy acidity. Authentic preparation means the wrapped package goes into the p'íib (the underground stone oven), where wood-fired heat and trapped steam produce meat that pulls cleanly from the bone without drying. When the p'íib is not available, a tightly sealed roasting vessel at sustained high heat is the closest approximation. The dish is central to the Yucatecan table as both everyday home food and ceremonial fare, and it moves cleanly from tamal filling — as in Vaporcitos de pollo and Cháamchamitos de jolo'och — to a main plate served with pickled red onion and black beans.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Free-range or heritage-breed chicken with genuine subcutaneous fat — the rendered fat carries the achiote colour deeper into the meat and enriches the braising liquid
02
STANDARD: Conventional whole chicken, cut to order — acceptable, produces a lighter braising liquid
03
SHORTCUT: Pre-cut supermarket chicken pieces — reduced surface area for marinade penetration; reduce marinating time to 4 hours minimum to avoid over-salting thin pieces
04
ACHIOTE: Use a freshly made recado rojo paste ground from whole annatto seed rather than commercial powder — the seed paste holds volatile aromatics that powder has lost

Sensory Tests

◇After blending the recado: paste should be uniformly rust-red with no visible granules; rub between finger and thumb — smooth, not gritty
◇After marinating 12 hours: flesh at the score marks should be stained copper-red 2–3 mm deep; if still pale at the bone, extend or score more aggressively next time
◇When unwrapping after cooking: the banana leaves directly against the chicken should be lightly charred at contact points and the steam release should carry an intense achiote-orange aroma with underlying caramelised onion
◇Internal temperature check at the thigh: 75°C / 165°F; juices at the joint run clear gold, not pink; flesh pulls from the bone with light finger pressure
