Large Baked Tamal Loaves with Black-Eyed Peas (Pimes / Piim)

Pimes (singular: piim in Yucatec Maya, meaning roughly 'thick' or 'dense') are substantial loaves of masa baked in banana leaves, studded throughout with x'pelón (black-eyed peas), a legume the Maya have cultivated since long before European contact. These are not party food in the festive sense — they are everyday sustenance from the milpa tradition, where corn, beans, and squash sustained entire communities. The loaves bake firm enough to slice, the masa carrying a gentle richness from lard and the faint smokiness of charred banana leaf. Pimes sit at the intersection of pre-Columbian staple cooking and the wood-fired hearth: vegetarian, filling, and wholly Yucatecan.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh masa from a tortillería using local cacahuazintle or x'nuc maize, same-day milled, coarse-ground. Fresh x'pelón (black-eyed peas) harvested young from a milpa garden.
02
STANDARD: Good-quality masa harina (Maseca or equivalent), reconstituted with warm water and a pinch of salt; frozen black-eyed peas, thawed and dried thoroughly.
03
AVOID: Canned black-eyed peas (too wet, disintegrate into the masa). Vegetable shortening in place of lard (flavour and texture are categorically different). Pre-softened banana leaves from a jar (insufficient structural integrity for a 75-minute bake).

Sensory Tests

◇After beating: a small ball of masa dropped into a glass of cold water should float — the lard has aerated it sufficiently.
◇Before wrapping: the dough should peel cleanly from your palm without sticking and show no dry fissures at the edges when pressed flat.
◇At 60 minutes: the banana-leaf parcel should feel rigid through the twine, not spongy. Any soft give means another 10 to 15 minutes.
◇On slicing: the cut face should show a pale gold crumb, firm enough to hold the slice upright, with visible whole black-eyed peas. A wet or gummy crumb means underbaking or excess moisture from the peas.
