Tamal Wrapped in Chaya Leaves (Dzotobilchay)

Dzotobilchay (Maya: 'that which is wrapped in chaya') is one of the oldest tamal forms in the Yucatecan repertoire, predating the banana-leaf and corn-husk traditions that Spanish contact accelerated. A masa of ground maize is mixed with toasted, ground squash seeds and layered with sliced hard-boiled egg, then each portion is enfolded in a fresh chaya leaf (Cnidoscolus aconitifolius) before steaming. The chaya leaf does double duty: it perfumes the masa from the outside in and holds enough structural integrity to serve as the wrapper without tearing. This is kitchen-garden food — the kind made when the milpa is producing and the household larder runs on what grows within arm's reach.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh masa ground the same day from nixtamalized local white field corn; squash seeds ground on a metate; chaya leaves picked young and used within hours.
02
STANDARD: Masa harina (Maseca) reconstituted with warm water to correct consistency; seeds ground in a spice grinder; chaya leaves from a reliable market source.
03
ACCEPTABLE COMPROMISE: Substitute spinach beet (chard) or taro leaves if fresh chaya is unavailable — the flavour shifts but the technique holds.

Sensory Tests

◇Float test: a walnut-sized ball of raw dough should rise immediately in cold water. If it sinks, the fat is insufficient — work in more lard.
◇Peel test at steaming's end: the chaya leaf should release from the masa surface cleanly, with no wet dough adhering. Any sticking indicates undercooking.
◇Press test: a finger pressed gently into the unwrapped tamal should leave an impression that slowly springs back — neither collapsing nor bouncing back hard like rubber.
◇Aroma at 30 minutes: the steam escaping the pot should carry green, slightly grassy chaya scent layered over the warm, corn-and-toasted-seed smell of the masa.
