X'nipek — Fresh Habanero and Tomato Salsa

X'nipek (Maya: 'dog's nose') is the table salsa of the Yucatecan kitchen — raw, sharp, and built for heat. Chopped ripe tomato, white onion, habanero, and sour naranja agria come together with no cooking and no resting time required. The name refers to the wet nose of a dog, a wry reference to the sweat a mouthful of habanero draws from the face. It is the condiment that appears unbidden beside poc chuc, grilled meats, and fried fish across the peninsula, and its honesty — no blending, no fire — sets it apart from every cooked salsa in the canon.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Ripe milpa tomatoes from a Yucatecan solar or market, naranja agria squeezed to order, habanero from the same market that morning
02
STANDARD: Ripe Roma (saladet) tomatoes, fresh naranja agria or a 50/50 lime-orange blend, commercially grown habanero
03
AVOID: Underripe or refrigerated tomatoes, bottled citrus juice, dried or pickled chile in place of fresh habanero
II

Sensory Tests

◇The diced tomato should hold its shape when lifted on a spoon — no mush, no weeping pool beneath it
◇The habanero fragrance should rise floral and bright before the heat registers on the palate; if it smells only of raw pepper and nothing else, the chile is underripe
◇Naranja agria juice should read tart but not sour-dominant; the acid lifts the tomato without overwhelming it
◇Salt check: a pinch too little and the tomato tastes flat; correctly seasoned, the sweetness of ripe tomato and the bite of habanero are both audible in the same mouthful
