Asiento / Zorrapa (Chicharrón Lard)
Asiento — also called zorrapa in parts of Oaxaca and the Isthmus region around Juchitán — is a deeply savory rendered pork fat preparation enriched with crumbled fatty chicharrón. As the mixture cooks down, the crackling solids release their residual fat and flavor into the lard, producing a spread with a rich caramel color and a concentrated pork character far more complex than plain lard alone. The result sits somewhere between a cooking fat and a condiment: spread onto fresh tlayudas, stirred into black bean paste, or used to finish tamales, it carries the smoky, toasty backbone that defines much of Oaxacan pantry cooking. Kennedy documents it as a staple of home larders in the region, made in batches and kept for months.
