Risotto alla sbirraglia — Padova, Veneto
Origin
Padovan — risotto alla sbirraglia (also sbiralia) is a traditional chicken risotto from Padova in the Veneto. The name possibly derives from "sbirro" (police officer), suggesting it was substantial enough to sustain hard-working men. It uses a whole chicken broken down and cooked into the risotto.
Description
A chicken is cut into small pieces (bone-in). The pieces are browned in butter. Onion, celery, and carrot (a soffritto) are added and softened. White wine is added. The chicken pieces simmer until cooked through. The meat is removed from the bones and set aside. The cooking liquid is supplemented with chicken broth. Rice is toasted in the same pan. The broth is added in ladlefuls. The chicken meat is returned near the end. Finished with butter and Parmigiano-Reggiano.

Flavour Context
Rich, savoury, and deeply chicken — the browning and braising produce a concentrated chicken flavour that permeates every grain. The soffritto adds aromatic depth. Butter and Parmigiano contribute richness. The overall impression is hearty, homey, and warming.
