Chalupas (Canoes)
A classic antojito from Mexico City and Puebla, chalupas are small hand-shaped masa ovals with pinched rims — their boat-like form gives them their name. Once cooked on a dry comal until lightly browned, they are topped with warm shredded chicken, raw tomatillo salsa, white onion, and crumbled fresh cheese. The contrast between the slightly crisped masa shell and the cool, bright salsa verde is what makes this street food endure. Kennedy documents the Puebla–Mexico City tradition specifically, distinguishing these from the thicker, saucier versions found elsewhere in Mexico.
