Nogada (Pecan Candy)
A traditional pecan brittle-style confection from Ciudad Camargo in the Chihuahuan north of Mexico, where Carya illinoinensis trees produce the region's prized nuts. Piloncillo — the unrefined cane sugar sold in truncated cones — is dissolved with a whisper of cinnamon, then driven to the hard-ball stage before the pecans are folded in and the whole mass is spread thin to harden into amber, crackling slabs. The result sits somewhere between a praline and a classic brittle: deeply caramel in flavour, with the pecans contributing both a buttery richness and a satisfying snap. It is a confection of the northern frontier, not of the capital, and carries the straightforward character of that tradition.
