Tamales Canarios (Canary Tamales)

A sweet, pale-yellow tamale from the eastern reaches of Michoacán, Mexico. Built on rice flour rather than masa, these festive tamales take their name from the canary-yellow color the egg yolks give the batter. The texture is closer to a steamed sponge than a traditional corn tamale — light, tender, and faintly sweet, studded with raisins. Diana Kennedy documents them as occasion food, typically served alongside atole or hot chocolate.

The Method

1
Sift rice flour and baking powder together into a bowl. Set aside.
2
In a stand mixer or with a hand mixer, cream butter and sugar on medium-high speed until pale and fluffy, about 3 to 4 minutes.
3
With the mixer running on medium, beat in egg yolks one at a time, alternating additions with spoonfuls of the flour mixture, until all four yolks and roughly half the flour are incorporated.
4
Add the egg white and milk, then beat in the remaining flour mixture until a smooth, creamy batter forms. It should fall slowly from a spoon.
5
Lay a buttered corn husk flat. Spoon a portion of batter onto the center of the husk's wide end. Press a few raisins into the surface of each portion.
6
Fold the sides of the husk loosely over the batter, then fold up the narrow end. Do not pack tightly.
7
Arrange tamales upright in a steamer basket over boiling water. Steam over steady medium heat for 45 to 55 minutes, replenishing with hot water as needed, until the batter pulls cleanly away from the husk and springs back when pressed.
8
Rest for 5 minutes before serving. Serve warm with atole or hot chocolate.

Sensory Tests

◇Press the center of the unwrapped tamale lightly with one finger: the crumb should spring back within two seconds, the way a properly steamed sponge does, rather than retaining the indent or feeling dense and compact.
◇The cross-section color should be a warm, even canary yellow throughout — pale straw or grey-white indicates insufficient egg yolk or overly processed rice flour; any wet, translucent patches near the center signal undercooking.
◇Held close, a well-made canario smells of warm butter and faintly of the corn husk, with no sour or fermented undertone; sourness signals either old rice flour or batter that rested too long before steaming.
◇Where it lives or dies. The dish lives or dies in the aeration of the batter: butter and egg yolks must be beaten long enough to trap air before the rice flour is folded in, because rice flour contains no gluten to provide structure — that air is the only scaffolding the crumb has. Fold too aggressively or skip adequate beating, and the steamed tamale will be a dense, gummy cylinder rather than the light, yielding sponge it is meant to be.
