Quelites Guisados (Seasoned Wild Greens)
A simple, honest preparation from Tuxtepec in the Papaloapan region of Oaxaca, where wild greens — quelites — are briefly boiled, chopped, and then finished in a small sofrito of white onion, lard, and tomato sauce. The dish distills a widespread Mexican tradition of cooking foraged greens into something deeply flavored with very little effort. Kennedy documents this version as part of the living vegetable cookery of Oaxaca's lowland communities.
