Moo Ping — Grilled Pork Skewers / หมูปิ้ง

Moo ping (grilled pork) is Bangkok's breakfast street food — thin slices of fatty pork belly or shoulder threaded onto bamboo skewers, marinated overnight in a mixture of coconut milk, fish sauce, palm sugar, garlic, coriander root, and white pepper, then grilled over charcoal until caramelised and slightly charred at the edges. The coconut milk in the marinade is the distinguishing element — it acts as a tenderiser, a fat carrier for the aromatic compounds, and produces a characteristically creamy-caramelised surface finish when grilled. Each skewer should have alternating lean and fat sections; pure lean pork dries out on the grill.

The Method

1
Combine the coconut milk, fish sauce, palm sugar, garlic paste, pounded coriander root, and white pepper in a bowl. Stir until the palm sugar has fully dissolved — the marinade should be uniformly smooth with no granular residue visible.

2
Slice the pork belly and shoulder to 3–4 mm thickness. Thread onto soaked bamboo skewers, alternating lean and fatty sections along each skewer so that every bite will carry both. Submerge the threaded skewers in the marinade, cover, and refrigerate overnight — 2 hours is the minimum. The pork should be deeply coated and carry no dry surface.
3
Prepare a charcoal grill to medium heat. This is where the dish lives or dies: the palm sugar and coconut milk in the marinade will burn before the pork is cooked if the heat is too high. Hold your palm 10 cm above the grate — you should be able to sustain it for 4–5 seconds. Lay the skewers over the coals and turn constantly, never leaving them still for more than 30 seconds at a time. The correct result is deep caramelisation with slight charring at the edges — not blackening, not pallor.

4
In the final 2 minutes of grilling, baste each skewer with the reserved coconut milk using a brush or folded banana leaf. The surface will take on a glossy, lacquered finish and fresh coconut fragrance will rise from the grate — this is the signal that basting is complete.
5
Remove the skewers from the heat. The pork should be cooked through, yielding no resistance when pressed lightly, with alternating caramelised and slightly charred sections across the surface. Serve immediately alongside steamed sticky rice and plain fish sauce as condiment.

Quality Hierarchy

01
Reserve — Heritage-breed pork with a high intramuscular fat ratio, sliced by hand to exact 3–4 mm thickness; fresh coconut milk pressed the same day; coriander root from the plant's first season; palm sugar from a single-origin producer.
02
Estate — Good-quality pork belly and shoulder from a known butcher; fresh coconut milk from a reliable supplier; freshly pounded coriander root; block palm sugar shaved to order.
03
Market — Supermarket pork belly and shoulder, fat content checked by eye before purchase; canned or carton full-fat coconut milk; dried coriander root reconstituted briefly in water; granulated palm sugar.
04
House — Any pork belly alone if shoulder is unavailable; carton coconut milk; coriander root replaced by coriander stem (the flavour will be lighter but the dish remains structurally sound).

Sensory Tests

◇Sight. The dissolved marinade is uniformly smooth with no visible granules of palm sugar remaining.
◇Sight. The grilled surface shows deep caramelisation — amber to dark brown — with slight char at the thinnest edges but no blackening across the body of the meat.
◇Sight. After the final basting, the skewer surface is glossy and lacquered rather than matte.
◇Smell. Fresh coconut fragrance rises from the grate at the moment of basting, confirming the coconut milk has contacted the hot surface.
◇Touch. The pork yields easily when pressed lightly at the thickest point — no hard resistance remains.
◇Where it lives or dies. The dish lives or dies at the grill: medium charcoal heat with constant turning is mandatory, as the palm sugar and coconut milk in the marinade will burn at high temperature before the pork is cooked through.
