Risotto con il pesce persico — Lombardy

‹ Lombardy

I

Origin

Lombardy — risotto con il pesce persico uses the freshwater perch (Perca fluviatilis) from the great Lombardian lakes — Como, Garda, Maggiore, and Iseo. The delicate, sweet flesh of lake perch is one of the finest freshwater fish, and this risotto showcases it in its lake-country context.

Description

Perch fillets are carefully skinned and boned — the fillets are small and delicate. Any bones and trimmings are used for a light stock. Rice is toasted in butter with a small amount of onion. White wine is added. A combination of the fish stock and light meat broth is added in ladlefuls. The perch fillets are added in the final minutes — they cook very quickly. Finished with butter and Parmigiano-Reggiano. Sage leaves fried in butter are a traditional garnish.

The Thread

—Both dishes set cooked fish in rice and finish it with butter, so the delicacy of the fish decides the result. Kedgeree uses smoked haddock and curry spice with hard-boiled egg, while the risotto keeps a fresh lake fish and releases the rice's starch into a creamy grain. British
—Both dishes answer the same need: how to cook freshwater fish from the lakes and rivers so that its mild sweetness is kept. Matelote stews the fish in wine with onion and mushrooms, whereas the risotto builds a stock from the trimmings and gives the fish only the last minutes of heat. French
—Both dishes toast the rice in fat before any liquid is added, then cook it in a measured amount of stock. Pilaf is cooked covered, with the grains kept separate, while risotto is stirred and fed with ladlefuls of stock until the grains bind in a creamy mass. Turkish

Flavour Context

Sweet, delicate, and gently lake-water fresh — perch has a mild, clean sweetness that is distinct from marine fish. Sage butter adds herbal warmth. Parmigiano provides savoury depth. The overall impression is gentle, refined, and deeply Lombardian.
