Risotto con il granchio — Venezia, Veneto

‹ Veneto

I

Origin

Venice and the Adriatic lagoon — granchio (crab) from the Venetian lagoon, especially the prized moleche (soft-shell crabs), has been part of the lagoon's cuisine for centuries. The risotto uses both the crab meat and a broth made from the shells for maximum flavour.

Description

Crabs are cooked and picked — all meat reserved. The shells are pounded and simmered with vegetables and tomato to make a crab broth. Rice is toasted in olive oil with garlic and chilli. White wine is added. The crab broth is added in ladlefuls. The picked crab meat is folded in at the end. Finished with olive oil and parsley. No butter, no Parmigiano.

The Thread

—Both draw the sea's concentrated flavour from crushed crustacean shells simmered with vegetables and tomato, so that the broth carries more of the animal than the meat alone can. The bisque is classically strained, enriched and thickened with rice or cream, whereas the risotto uses the broth as the cooking liquid for the rice and keeps the picked meat whole. French
—Both cook rice in a broth made from shellfish and aromatics, with garlic and the sea's flavour at the centre of the dish. The arroz negre is coloured and seasoned with cuttlefish ink and is cooked without stirring in a wide pan, while the risotto is stirred in ladlefuls to a creamy consistency. —Both build the soup or rice on a stock made from the crab's own shells, with the picked meat added at the end so that its sweetness and texture remain distinct. The American bisque is finished with cream and often sherry, while the Venetian risotto uses no dairy and relies on olive oil, white wine and parsley. American · (Chesapeake · And · Gulf · Coast)

Flavour Context

Sweet, delicate crab with the concentrated briny depth of a shell broth — the meat provides sweetness, the broth provides marine complexity. Garlic and chilli give gentle warmth. Parsley and lemon brighten.
